Bagelsaurus began in 2013 with a sketch of a logo on a napkin, and a pop-up within Cutty’s Sandwich Shop in Brookline, MA where baker/owner Mary Ting Hyatt worked under mentors Charles and Rachel Kelsey. There, she mixed hundreds of bagels by hand each week, gauging interest while testing out flavors and systems for her own operation. With the support of some great press and a following of sea salt / honey rosemary enthusiasts, the microbakery outgrew its home there and moved across the river to feed the hungry residents of Camberville. The first and only Bagelsaurus brick and mortar opened in the Fall of 2014.  

Thanks to incredible staff members (rotating and 10+ years and counting) who have contributed their energy and ideas, Bagelsaurus has become more than the quiet neighborhood bakery cafe that Hyatt had envisioned. We’re a workday pitstop, a family routine and a line-out-the-door-egg-sandwich destination.
